No trip to the south is complete without a spunky crunchy serving of yummy Fried Green Tomatoes. These are served proudly as appetizers in almost every restaurant at this time of year and they are fantastic. Right now, fresh, firm green tomatoes are abundant and offered at every market, farm stand and in all grocery stores.
Here's a recipe if ya'll want to conjure up a delicious summer side dish or appetizer.Three or four slices is a meal for me. (Recipe may be halved or doubled):
4 - 5 large firm green tomatoes
2 eggs
1/2 cup buttermilk (if you don't have buttermilk, add a teaspoon of vinegar to 1/2 cup milk)
1 cup all purpose flour
1/2 cup cornmeal
1/2 cup breadcrumbs or Panko
1 tsp salt
1/4 - 1/2 tsp black pepper
pinch (or more if you like it hot) of cayenne (optional)
(You may also add garlic powder, paprika and / or onion powder)
olive oil for frying
Wash tomatoes, dry off with paper towels
Cut tomatoes into 1/2" thick slices
Whisk eggs and buttermilk together
Mix cornmeal in separate bowl with salt & pepper (and whatever else you like to zip up the flavor a bit more)!
Dip tomato slices in flour to coat
Next, dip tomatoes in egg/milk mixture
Dredge in breadcrumbs / panko and you're ready to go!
Fry in hot oil in a cast iron pan until coating is brown.
Drain on paper towels.
Serve a few slices per person with your choice of dipping sauce (Homemade Ranch Dressing works well).
